Deep Fried Selar with Soy Sauce

Tonight's dinner is the simple Deep Fried Selar with Soy Sauce served with steamed white rice. Hmm, let me say it in Malay, Ikan Selar Goreng masak kichap. Better rite! To make the sauce I combined dark thick soy sauce, oyster sauce, chili sauce and light soy sauce with water.

In a wok, heat up the oil and fry the onions, garlic, ginger, red chilies, lemongrass and tomato until nice aroma comes and the tomatoes look mashed, then add the sauce and let it cook until it boils. Add salt and black pepper according to taste. After it's cooked, pour the sauce on to the fried Selar and garnish with coriander leaves and red chili.

Don't forget to marinate the Selar with salt and turmeric before frying it. Adds more taste to the dish.

Served in the kids favorite Angry Birds bowl simply to attract them.
